Took a recommendation from a friend who used to live in Longmont, and now I don't think I can eat other pizzas. This place is so good. I've had their round pie and their square pie. Both are delicious. You really can't go wrong with either. If you like a thinner crust, go round. If you like a thicker crust that's crispy and a bit oily in the best way possible, go square. Their bacon ricotta pie is amaze balls. They make their own bacon. It's so good that I wish they sold it on the side. PRO TIP: Their pizzas are LARGE. If you have leftovers, don't cheat yourself by nuking a slice in the microwave. Pop a slice in the oven, warm it up to 400 degrees and then check on it a few minutes later (or when your nose tells you it's done).
I can't say enough how much I love Rosalee's. Fabulous pizza, amazing staff who make you feel like family, relaxed atmosphere, good beer. The only way this could be better is if it were closer to home but its worth the trip from Denver. Seriously. Go visit!
I was interested in dining at this place since they listed on Google that they were open for dine-in. I get there and they tell me it's take-out only. That's strike one. I aimlessly walked downtown for 40 minutes because that's the time I was told the pizza would be ready. I go back and they tell me 4 more minutes, which turned to 10. Strike two. I paid over $50 for a square pizza and sausage knots (which were $8). Strike three is when I opened the box of sausage knots there was only 3 😑. For $8 I should at least have 6 of them, and they were already small. The pizza was mediocre and the crust was bland. And decent pizza places back east actually add butter to their square pizzas as standard. So I have to question the validity of certain reviews that are comparing this establishment to NY pies, which is absurd.
I've been coming to Rosalee's for five years and am convinced its the best pizza in Longmont and Northern Colorado. Whether you decide to get a round or square pie (I personally love the square), I promise you will not be disappointed. The only thing better than the food are the people working there.
O.k. it's good pizza, way over price. I understand in these times they need to make $. 6.00 for salad for 1 person, come on. Not what I expected, not even for two. The $ symbol should change to $$$$. Back to other home time favorites that can deliver value for price paid.
